FAVORITE RECIPES FOR JULY 4 PICNICS!
RICOTTA CHEESE PUFFS
1 lb. ricotta cheese
3 eggs, slightly beaten
3 heaping tablespoons granulated sugar
4 teaspoons baking powder
1 cup sifted flour
1/2 tsp. salt
Oil for deep frying (yep, you are actually frying!)
Confectioner's sugar (YUM!)
Mix ricotta, eggs, granulated sugar and baking powder and let stand one hour. Then add flour and salt and beat until smooth. Drop batter by teaspoonfuls (these make nice, mouth-size puffs) into oil heated to 350 degrees and brown lightly. Remove with slotted spoon to drain and dust with Confectioner's sugar. Eat WARM!
I'm not sure how many it makes because that part of the recipe has been lost for years! But the above is all you need to make everyone declare Ricotta Cheese Puffs as a new favorite!

If you are ambitious on the same day, you can move on to this one:
Buy a pound cake (you might want to after making the Ricotta Cheese Puffs because you may not want an assembly line in your kitchen like I do when it comes to baking; we refer to this as the "baking frenzy");
Slice cake lengthwise so that you make (3) total "layers";
Mix a combination of Ricotta Cheese , about a small container, (see why these recipes are good made together?) and a container of Cool Whip;
Fill the layers with this mixture and add freshly sliced strawberries and blueberries on top of each layer;
Assemble for a beautiful and impressive presentation that is easy to do and YUM!
You can even add small American Flags to put it over the top.
