Sweet Treats

Planning Factory is gearing up for our holiday party / potluck in two weeks... and that means baking for some of our elves!

Chooch, a beloved member of the PFI family (and uncle of a current staffer!) brings amazing dishes from his mother's recipe collection each year. Here's one to share:
Gertrude's Christmas Cookies:
1 cup butter
1 cup brown sugar
1 cup white sugar
1 cup butter, softened
2 eggs
2 cups sifted all - purpose flour
1 tsp baking soda
1 tsp vanilla
½ tsp salt
2 cups quick oats
2 cups rice cereal
1 cup yellow raisins


Cream butter and sugars until fluffy, add eggs and vanilla. Beat well. Sift together flour, salt and soda. Add to cream mixture and mix well. Add oats, cereal and raisins, blend well. Drop by tsp. onto greased cookie sheet 2” apart. Bake in preheated 350 degree oven 12 to 15 minutes.
